EATING OUR WAY THROUGH THE ZODIAC AQUARIUS 2019

Winter Seed Porridge

Hello Aquarius. You snuck up on me! I so wanted to host an Aquarian social with a mix of fabulous friends, a book exchange, exceptional discussions and of course an amazing spread of culinary delicacies…sigh. This winter has been much busier than usual and time seems to disappear. I have been working a lot of late hours and to top it off my sleep has been crappy! I am edgy with a dash of anxiety. I do believe that Saturn (Aquarius’ ruling planet) is involved and some Aquarian remedies may nourish my nervous system and give me a good nights rest. The airy Aquarius is a thinking sign. It is a truth seeker symbolized by the water bearer, who pours its knowledge and compassion to all. The Aquarian may be opinionated and strongly tied to their beliefs, but most will have the curiosity and an open mind to hear out new or different perspectives. It is the sign of friends and friendships that will cross all boundaries and conventions. I am blessed to be surrounded by Aquarian types who constantly expose me to a community that believes in more for all people and our planet. With Aquarius on my 6th house cusp of health, I have a propensity to many of the physical manifestations associated with Aquarian imbalances: weak ankles and rolling of feet, tight calf muscles, cramping or charley horse, restricted range of motion, cracking in joints, poor circulation, varicose veins, sluggish elimination, nervous system imbalances and anxiety. One of the loveliest herbs I use for strengthening and nourishing the nervous system is oat straw and a favourite for emotional stress is Melissa or lemon balm. Amethyst brings balance to the mind of the airy Aquarian. It is known for protection from dark thoughts or energies and will bring clarity to visions and support intuition. It has an affinity to the nervous system, for circulation and sleeping.

For us in the northern hemisphere, Aquarius time is smack dab in the middle of winter. I tend to carry the heat of Aquarius’ sanguine temperament, along with the dryness of Saturn. My skin is thirsty and my nervous system and digestive tract parched. When I wake I am looking for a breakfast that will carry me through my busy morning. This breakfast will nourish and stimulate my sluggish digestive system and soothe and hydrate my frazzled nerve endings. This is a staple winter breakfast for me. It is quick easy and if I am in a rush, I can throw it in a thermos and bring it with me to the office. I share this recipe with a lot with clients and friends as it fits into many alternative dietary plans – vegan, paleo, keto, gluten free… and it is just darn delicious.

Winter Seed Porridge (4 servings)

Ingredients:

1/3 cup chia seeds

2 pears or apples

2 tsp of any or a mixture of the following: cinnamon, ginger, anise, cardamom

1/3 cup pumpkin seeds

1 cup frozen berries (blueberries, raspberries, strawberries)

1 can of coconut milk

1/3 cup hemp seed

4 Tbsp collagen

Do the night before:

Put chia in small mason jar - fill with water let sit overnight

Slice up 2 apples or pears into a medium pot and add enough water to cover the bottom of the pot

Add sweet spices and cook for 15 - 20 minutes on low heat. Turn off heat.

(I will leave the pot covered on the stove till morning. You can put in the fridge.)

In the morning:

In the pot with the pear/apple sauce pot add soaked chia, pumpkin seeds, frozen berries, coconut milk

Heat up in pot until all berries are thawed and mixture is hot. Turn off heat.

Stir in hemp seed and collagen. Enjoy!
